It is the last week before payday, so creative and experimental (read: not cheap) dinners are out, and simple, easy, cupboard-raiding recipes are in. I have a few up my sleeve for weeks like this.
One commenter said a few weeks back that she liked the ideas on my blog but as a student, she did not always have the money to try them out. Well, this one's for her. All you need: eggs, bread, cheese and baked beans. What student does not have those four staples close to hand?
What I really like about this recipe, though, is that it doesn't feel boring, it doesn't taste boring, and actually, even if I have it once a month, I don't get tired of it.
Beans on cheesy toast topped with a poached egg
(serves 1, very easily doubled)
1 piece of multigrain bread (like Allinson's)
½ tin of reduced sugar and salt baked beans
30 g of your favourite reduced fat cheese (I like Tesco's reduced fat farmhouse)
1 medium egg
Preheat the grill on medium.
Bring a small pot or a deep pan to boil to poach the egg.

Once the water has boiled, reduce the heat to a gentle simmer and drop the egg in. Poach for 3-5 minutes over a gentle heat.
Remove and plate the cheese toast from the grill and top with the beans. Gently lay the egg atop the beans and serve immediately.
Calories: around 350. (Your choice of bread and cheese could alter this slightly)
As I mention above, the recipe is easily doubled. My husband often likes to have two pieces of toast and two eggs, which is not a problem to incorporate into the cooking. Even so, I still split the one tin of beans between us, even if he does have more bread, cheese and eggs than me.

I like the idea of "upgrading" beans on toast. Makes me feel like a student again... that and watching Countdown.
