suggestions? requests?

Hi all

As we're now officially a month in to 2008, I thought it would be a good time to ask you if you have any ideas for meals to cook up. As some of you know, my goal is to eat really good food every day without overloading on the calories or the fat. That does not mean denying myself anything - generally it just means cutting down on portions and using reduced-fat products when I can. I'm really excited by a few comments lately that people have been enjoying the site. And I want to make this more interactive. For example, do you love a certain food but are not sure how to cook it healthily? Lay it on me, and I'll give it a try.

The other layer to what I'm doing here centres around the fact that generally, the chef isn't just cooking for him or herself - he/she's cooking for a spouse, a partner, children, or friends who may or may not have the same dietary requirements. I'm working to find ways to ensure everyone at the table is eating healthily - but is also satisfied when it comes time to clear the table.

Now that January's well and truly out of the way, we can start experimenting with more February foods - check out my next post about the best produce available this time of year. I'm working my hardest to come up with the tastiest, most delicious and most guilt-free meals I can.

I went to dinner last night and trying to have the healthy choice (on a menu full of rich, heavy meat dishes) i had a brazil nut loaf which i would love to try and recreate, but wouldn't have a clue how! especially without it ending up really dry!

another area i'm really afraid of is fish such as skate which i wouldn't have a clue what to do with! though it always tastes yum when other people make it.

what are other people's thoughts?

I am a sucker for creamy pastas but know they are very rich and full of calories. Is there any way around this does anyone think?

i'm a real fan of indian curries and all that go with it - naans, poppodums etc - if there's a way around this i'll be impressed! also, i love carribean and creole food but have no idea how to make it!

Hmmm, all good ideas! Skate is really healthy - all you need to do is put it under the grill - if you like a sauce on it then maybe use olive oil and capers?

Creamy pastas are another tough one - I always just try to use as little cream as possible and pick single instead of double cream. I am thinking of trying a "healthy" carbonara soon, so will let you know how it goes!

As for Indian food, I think one of you hit the nail on the head when it comes to naan breads and poppadoms - it's hard to make those healthy. But it's so hard to avoid a lovely curry. I try to fill up on the healthy stuff as much as possible. One thought is that chapatti bread is a healthier option? What do you all think?
